Stuffed Pasilla

Ingredients:


Stuffing:

-1lb ground beef (season with taco seasoning, black pepper and garlic salt)

-1pkg of Oaxaca Cheese or mozzarella cheese (cut into long wedges)


Sauce:

-4 roma tomatoes

-2 serrano chiles

-handful of cilantro

-4-5 garlic cloves

-1 cup of water

-2 tablespoons of chicken bouillon


Batter:

-3 eggs

-1 cup of flour


-5-6 Green Pasilla Peppers (1 per person )


Directions:

  1. Grill the pasilla's on all sides in order to be able to peel the skin off (put in closed container or ziplock bag for them to steam and soften up to get skin off easier (about 5 min) after which get a napkin and wipe of skin and set aside.

  2. For the sauce rinse all produce and add to blender raw blend until smooth and season with chicken bouillon. (set aside)

  3. For the batter add in egg whites into a bowl and whisk on high until frothy and peaks form. Add in yolks and whisk together until combined. (set aside)

  4. For the stuffing add ground beef to a skillet and season with taco seasoning, black pepper and garlic salt cook until done. (set aside)

  5. In a non stick skillet add some vegetable oil and get hot on medium.

  6. Assembly: make a small cut on the top of the pasilla and stuff with ground beef and slice of cheese then roll in flour and dunk in egg batter. Add to hot skillet and brown on all sides and set aside on plate.

  7. When all your pasilla's have been browned and set aside add in your raw sauce to the hot skillet bring up to a simmer and add your pasillas back in the pan. Cover for 5 min and they are ready for eating!!
