Mexican Chicken Salad Tostadas

Ingredients:

-1 to 2 chicken breast (cooked and shredded)

-4 to 5 red potatoes (cooked and diced)

-1/4 white onion (thinly diced)

-1 1/2 cup of frozen carrots & peas mix

-1 jar 7oz pickled jalapeños (finely dice jalapeños and carrots that are in jar-ALL)

-1/2 cup sour cream

-1 cup of mayonnaise

Season with Johnny seasoning and pepper to taste.


Directions:

1. In bowl add in cooked shredded chicken

2. Dice up potatoes, onion and jalapeños add to shredded chicken bowl. Add in frozen peas and carrots and Incorporate all together.

3. Add in sour cream and mayo and a couple of tablespoons of the pickled juice from the jalapeños can and season with pepper and Johnny seasoning to taste

4. Mix everything together until all incorporated.
