Red Chicken Posole

Ingredients:

-2 chicken breasts (frozen is fine)

-1 can of gold or white hominy (108oz) (rinse and strain with cold water)

-5-6 Guajillo dry chile pods (take stem off and dump out seeds)

-6 garlic cloves


Seasoning: Chicken bouillon, Menudo Mix (or dry mexican oregano and onion powder)


Directions:

  1. In a pot add in 2-3 chicken breasts or chicken thighs bone in and add in 5 cups of water and season with chicken bouillon and some oregano, and salt.

  2. Boil until chicken is done and shred.

  3. In the pot add in rinsed hominy.

  4. In your blender add in chile pods, garlic and some of the chicken stock from the crock pot. Blend until smooth.

  5. Add blended chile to pot.

  6. Mix everything together and bring pot to a boil (Season with additional chicken bouillon and menudo mix or oregano until it tastes perfect) and then put on low and simmer for 20-25 min until hominy is soft.

TOPPINGS: You can top posole with the following (diced cabbage, chopped onion, lime juice and enjoy with the tostadas or tortilla chips)
