Jalapeño Popper Chicken

Ingredients:
-4-5 chicken breasts (if they are thick cut long ways in half)
-1 8oz Cream Cheese
-3 Serrano Chiles (dice small)
-1/2 pack of Bacon
-1 cup of shredded cheese (Colby or any mix cheese)
Olive Oil (drizzle over chicken)
Seasoning (garlic salt and black pepper)
Directions:
1. Preheat oven to 400 degrees.
2. In a small bowl combine cream cheese, serrano chiles, shredded cheese and season with garlic salt and black pepper.
3. In a pan add vegetable oil and add par cook the bacon. You want to render some of the fat out and get a bit of a crisp on it but not cook all the way it will finish in oven. (cut the bacon in half)
4. On a cutting board use a small knife to make 4 cuts on your chicken in order to be able to stuff it with your cheese mixture. Make sure not to cut through the chicken but half way down in order to keep the chicken intact.
5. Add a bit of oil to your baking dish and start stuffing our chicken with the cheese mixture and a piece of bacon to each of your cuts. Line them on your baking dish.
6. Once all your chicken is stuffed drizzle with a bit of olive oil and season with garlic salt and black pepper.
7. Bake at 400 degrees for 20-25 min or until fully cooked. (don't cover with foil you want it to brown on top)
