Ground beef & Potato Sopes

Ingredients:

-2 cups of Corn Masa

-1/2 cup of flour

2. In a bowl add Corn masa and flour and add room temperature water until it combines together without being to soft or to firm to make until small balls.

-1/4 onion (small dice)

-3 potatoes (red or russet) (small dice)

-1 can of refried beans


Condiments:(1/2 cup of cotija cheese (shredded) or American cheese (shredded), sour cream, salsa, diced onion, diced tomatoes, shredded cabbage or shredded lettuce, avacado)


(Seasoning: Taco Seasoning, Garlic Salt and black pepper)


Directions:

1. In a non-stick pan add oil and get very hot

2. In a bowl add Corn masa and flour and add room tempature water until it combines together without being to soft or to firm to make until small balls.

3. Flatten our with your hand and add a small hole with your finger in order to fry evenly in oil.

4. Add to pan and brown on both sides add sprinkle a bit of salt to season sope.. repeat until done with masa mixture.

5. In same pan add small diced potatoes and partially cook (medium-high)

6. Add ground beef to partially cooked potatoes, onion and season with taco seasoning, garlic salt and black pepper (put lid on it in order to finish cooking potatoes and meat.

7. In small pot warm through can of refried beans (set aside)

8. Layer the Sope with beans then meat mixture and then add all condiments you like on top!
