Green Pozole

Ingredients:
-2 chicken breasts and
-1-2 chicken thighs (bone in-skin on)
-1 can of Hominy (white or yellow-the big can)
-4 Tomatillos
-3 Serrano Chiles
-4 garlic cloves
-1 whole head of cilantro
-Chicken Bouillon for seasoning
- Menudo Mix (or if you cant find this use whole oregano until desired saltiness!
Directions:
1. In small pot bring to boil 7 cups of water (add a bit of salt to water and bring to boil)
2. Add in chicken and cook chicken thoroughly (medium heat)
3. Remove chicken breast and shred (add back in pot)
4. Open and rinse can of hominy and add to pot (let simmer)
5. In blender add tomatillos, chiles, garlic and cilantro (rinse before adding cilantro). Add a couple of cups of water from your stock that you have in the pot. (blend until smooth)
6. Add green mixture to pot and mix all together.
- Menudo Mix (or if you cant find this use whole oreganoo until desired saltiness!
Condiments:
On top of pozole you can add lime, diced cabbage and diced onion! Eat with tortilla chips!!
