Coconut Curry Chicken

Ingredients:
-4 chicken breasts (cut into cubes)
-2 (7oz) cans of Peanut Satay Sauce or any concentrated yellow curry sauce
-1 (13.5oz) can of Coconut Milk
-1 Red bell pepper (cut in cubes)
-1/2 Green bell pepper (cut in cubes)
-1/2 Red Onion (cut in cubes)
-2 Serrano Chiles (slice in quarters) take out seeds if you don't want it that spicy
-2 garlic cloves (minced)
-Handful of cilantro (wash and rough dice)
Season with Garlic salt and kosher salt
Directions:
In a skillet add vegetable oil and get warm. Add in diced chicken and sauté with a bit of garlic salt. Add in minced garlic cloves and sauté for a few minutes to cook the chicken.
Add in diced bell peppers, onion and chile and sauté to get everything incorporated. Set to low heat and put lid on it for veggies can start cooking through about 4-5 minutes.
Add in Peanut Satay Sauce and mix together add in coconut milk and let everything simmer for a few minutes then add in Cilantro and taste if it needs more salt add in kosher salt. Let simmer for 5-10 minutes.
