Chicken Pot Pie

Ingredients:

-2 cooked and shredded chicken breast

-2 cups of chicken stock

-Pie crust (store bought is fine, usually comes in a 2 pack)

-1 package of puff pastry

-3 celery sticks

-3 carrots

-1 1/2 cup frozen peas

-1/2 cup flour

-1/2 cup of heavy cream

-some springs of fresh thyme and rosemary


Directions:

1. Dice carrots, celery and onion

2. In a non-stick pan add a couple of tablespoons of butter and a drizzle of vegetable oil warm up and add all veggies, Saute until they all get a bit soft and add fresh herbs thyme and rosemary.

3. Add in flour and stir for a minute or two in order to cook out the flour.

4. Add in chicken and frozen peas and mix.

5. Add in pepper, garlic salt and any Cajun seasoning you prefer

6. Add chicken stock and heavy cream and let whole thing come to a boil in order to thicken up sauce.

7. Once it boils turn off and let cool a bit.

8. In a baking dish (it can be a baking pie dish or a baking pan) oil the bottom so the pie crust does not stick lay out pie crust and poke some holes on the bottom with a fork bake at 350 for like 7-8 min until sides are a bit brown but still soft.

9. Add in chicken mixture and then lay puff pastry on top. whisk an egg and brush the puff pastry to give it a shine as it bakes.

Bake at 400 for 10-15 minutes or until puff pastry is nice and toasted on top!
