Chicken Pad Thai

Ingredients:
-1-2 Chicken breasts depending on size (cut into thin slices)
-2 eggs (scramble well)
-3 tablespoons of milk
-1 package of Stir fry veggies (I love and use Kroger brand Stir fry Pad Thai Kit with sauce)
-1 can of Pad Thai Sauce (I use Kroger brand)
-1 pkg of Pad Thai Noodles (found in oriental aisle)
-1/4 onion (diced)
-1 serrano Chile (cut into quarters) take out seeds if you want less spicy
-Handful of fresh Cilantro
Directions: 1. In small pot bring 8 cups of water to boil with salt and a bit of vegetable oil (helps noodles not stick together. Add noodles and cook for about 4 minutes or until softened. (strain and set aside) 2. In non stick pan add vegetable oil and let get hot add in thinly sliced chicken breast and sauté with a bit of pepper and garlic salt (until cooked). Add in chile and onion and let sauté. 3. In small bowl add in egg and milk and whisk together until scrambled well. 4. Add in egg mixture to chicken and make sure eggs cooks thoroughly. 5. Add in half of the bag of the stir fry veggies from the kit and let sauté for a bit until the soften up. 6. Add in peanut sauce that comes with the Pad Thai kit and stir fry. Also add half the container of the Pad Thai sauce. 7. Let simmer and add in noodles a little at a time until everything is incorporated. 8. Add fresh cilantro to top and mix in.
