Camarones a la Diable= Deviled Shrimp (Spicy)

Ingredients:

-2lbs of raw shrimp (peeled and devained)

-1/2 white onion (sliced thinly)

-8oz white button mushrooms (thinly sliced)

-3 Guajillo Dry Chiles (take off stems and take out seeds)

-6 New Mexico Dry Chiles (take off stems and take out seeds)

-8-9 Chile de Arbol Dry Chiles (take off stems, leave in seeds)

-3 roma tomatoes

-8 garlic cloves for sauce

-3 garlic cloves (minced) for sauté

-5 tablespoons of butter

-2 tablespoons white sugar


(Season with garlic salt and Kosher salt)


Directions:

  1. In a small pot add in tomatoes, garlic and all dry chiles. Add in enough water to just cover the roma tomatoes and add in a handful of salt. Bring to boil and let simmer until everything is soft.

  2. Blend everything from pot and add in 2 tablespoons of sugar and blend and make sure it is very smooth.

  3. In a pan add in butter and minced garlic and start melting together add in sliced onion and mushrooms and sauté together until onion is a bit translucent.

  4. Rinse shrimp and strain add in to pan and saute with onion and mushrooms.

  5. Add in sauce and combine everything together, simmer until shrimp (turn pink) are done (season to taste with Kosher salt)

Pair with my Cilantro Rice for a yummy dinner!!
